Our center-cut 8oz filets are aged on the carcass for 20 days before extracting from the animal. Adding an aging process to a filet mignon might sound like overkill, but extracting the liquids with our lighter aging program makes for the most flavor filet experience.
We are currently shipping our products every Tuesday, via FedEx Priority Overnight; please select your delivery date in checkout.

Shipping Information
- We are currently shipping our products every Tuesday, shipped via FedEx Priority Overnight - products are expected to arrive next day (Wednesday)
- Our products are shipped to you fresh and never frozen, sealed in vacuum packages. To ensure your order stays cool, perishable items are carefully hand-packed in a Styrofoam cooler, accompanied by frozen gel packs - we never use dry ice.
- This cooler is then securely placed into a sturdy shipping box, designed to withstand up to 48 hours of unrefrigerated shipping.
- You will receive a FedEx tracking number once the order ships
