Our center cut 32 oz filets are dry aged for 20 days on the carcass before being carefully extracted from the animal. While aging a filet mignon might seem unnecessary, our lighter aging program actually enhances the flavor of the steak by extracting excess liquids. The result is a mouthwatering, flavor-packed filet.

We are currently shipping our products every Tuesday, via FedEx Priority Overnight; please select your delivery date in checkout.

Shipping Information 

  • We are currently shipping our products every Tuesday, shipped via FedEx Priority Overnight - products are expected to arrive next day (Wednesday)
  • Our products are shipped to you fresh and never frozen, sealed in vacuum packages. To ensure your order stays cool, perishable items are carefully hand-packed in a Styrofoam cooler, accompanied by frozen gel packs - we never use dry ice.
  • This cooler is then securely placed into a sturdy shipping box, designed to withstand up to 48 hours of unrefrigerated shipping.
  • You will receive a FedEx tracking number once the order ships
  • We will be expanding our shipment dates later in the year
